The Age

checking-proofThe Solera produces an average aged bourbon of over 8 years that will continue to get older each year.

The Proof

100 proof because it is the strength of tradition. To verify the whiskey being sold was not watered down, customers would use it to light their gunpowder. The minimum alcohol percentage needed was 50%, which became known as 100 proof. Also, it is easier to add other ingredients to a cocktail to lower proof from a stronger spirit than it is to add proof to a cocktail without altering the spirit’s character.

The Milling

barleyAll grains used in the Colorado bourbons were milled at the distillery just before fermentation to avoid oxidation. This creates a more flavorful mash.
